Biryani is a flavorful and aromatic rice dish made with spices, meat (chicken, mutton, or beef), or vegetables. Below is a step-by-step guide to making Chicken Biryani.

Ingredients

For Marination:

  • 500g chicken (cut into pieces)
  • ½ cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons oil
  • A few saffron strands (optional)

For Rice:

  • 2 cups basmati rice (soaked for 30 minutes)
  • 5 cups water
  • 2-3 green cardamoms
  • 1 bay leaf
  • 1 cinnamon stick
  • 3 cloves
  • 1 teaspoon salt

For Cooking Biryani:

  • 2 onions (thinly sliced)
  • 2 tomatoes (chopped)
  • 1 tablespoon biryani masala (optional)
  • 1 teaspoon cumin seeds
  • 2 green chilies (slit)
  • ¼ cup coriander leaves (chopped)
  • ¼ cup mint leaves (chopped)
  • 2 tablespoons ghee or butter
  • 2 tablespoons oil
  • 1 cup warm milk (optional, for saffron milk)

Step-by-Step Cooking Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, lemon juice, and oil.
  2. Cover and let it marinate for at least 30 minutes (or overnight for best results).

Step 2: Cook the Rice

  1. Boil 5 cups of water in a large pot.
  2. Add salt, cardamom, bay leaf, cinnamon, and cloves.
  3. Add soaked and drained rice, cook until 70% done (it should be slightly firm).
  4. Drain the rice and keep it aside.

Step 3: Prepare the Chicken Masala

  1. Heat 2 tablespoons of oil in a deep pan.
  2. Add cumin seeds and sliced onions, sauté until golden brown.
  3. Add chopped tomatoes and cook until they turn soft.
  4. Add marinated chicken and cook until the chicken is tender.
  5. Add biryani masala, coriander, and mint leaves.

Step 4: Layering the Biryani

  1. In a large heavy-bottomed pot, spread a layer of cooked chicken masala.
  2. Add a layer of cooked rice on top.
  3. Drizzle ghee or butter and saffron-infused milk (if using) over the rice.
  4. Repeat layers until all ingredients are used, finishing with rice on top.

Step 5: Dum Cooking (Final Steaming)

  1. Cover the pot with a tight lid (seal with dough for better results).
  2. Cook on low heat for 20-25 minutes (you can also keep a heavy pan below to avoid burning).
  3. Turn off the heat and let it rest for 10 minutes before opening the lid.


Step 6: Serve and Enjoy

  • Gently fluff the biryani with a fork.
  • Serve hot with raita (yogurt sauce) and salad.
