How to Make Biryani – Step-by-Step Recipe
Biryani is a flavorful and aromatic rice dish made with spices, meat (chicken, mutton, or beef), or vegetables. Below is a step-by-step guide to making Chicken Biryani.
Ingredients
For Marination:
- 500g chicken (cut into pieces)
- ½ cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons oil
- A few saffron strands (optional)
For Rice:
- 2 cups basmati rice (soaked for 30 minutes)
- 5 cups water
- 2-3 green cardamoms
- 1 bay leaf

- 3 cloves
- 1 teaspoon salt

- 2 onions (thinly sliced)
- 2 tomatoes (chopped)
- 1 tablespoon biryani masala (optional)
- 1 teaspoon cumin seeds
- 2 green chilies (slit)
- ¼ cup coriander leaves (chopped)
- ¼ cup mint leaves (chopped)
- 2 tablespoons ghee or butter
- 2 tablespoons oil

Step-by-Step Cooking Instructions
Step 1: Marinate the Chicken
- In a bowl, mix chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, lemon juice, and oil.
- Cover and let it marinate for at least 30 minutes (or overnight for best results).
Step 2: Cook the Rice
- Boil 5 cups of water in a large pot.
- Add salt, cardamom, bay leaf, cinnamon, and cloves.
- Add soaked and drained rice, cook until 70% done (it should be slightly firm).
- Drain the rice and keep it aside.
Step 3: Prepare the Chicken Masala
- Heat 2 tablespoons of oil in a deep pan.

- Repeat layers until all ingredients are used, finishing with rice on top.
Step 5: Dum Cooking (Final Steaming)
- Cover the pot with a tight lid (seal with dough for better results).
- Cook on low heat for 20-25 minutes (you can also keep a heavy pan below to avoid burning).
- Turn off the heat and let it rest for 10 minutes before opening the lid.
Step 6: Serve and Enjoy
- Gently fluff the biryani with a fork.
